Crawfish

LA is divided into parishes, not counties.  In this area of Evangeline Parish are many crawfish farms. The fields are flooded with water twice annually (once in the fall and once in the spring) for raising the crawfish. Sprinkled throughout the flooded fields are crawfish traps (similar to lobster pots), into which the crawfish crawl but from which they can't escape. As in this photo, the farmer periodically boats from trap to trap and dumps the captured crawfish in a container on the boat. 

Tonight, our dinner will be an old fashioned crawfish boil (100 pounds), supplied and prepared by the RV park owners Ken and Jane). Anne, our usual caterer, has 2 days off (yesterday and today).
